  • Love Apple Soup

Ingredients:

  • Light vegetable stock: 450 ml / 15 fl oz
  • Garlic: 4 cloves
  • Olive oil: 4 tablespoon
  • Onion: 1 (chopped)
  • Cherry tomatoes: 675 g / 1 lb
  • Himalayan salt
  • Ground black pepper to taste

For Garnishing:

  • Chives (chopped)
  • Heart-shaped croutons
  • Soya cream - optional

Directions:

  1. Heat the oven to 400 degrees. In the meantime, position the garlic and the tomatoes over a single layer in a roasting dish and dip in 3 tablespoon of olive oil.
  2. Bake the mix for around 30 minutes or until the garlic is soft and tomatoes change color. Fry the onions in a large saucepan until lucent, keep in mind not to over do it.
  3. Now, add the garlic to the onions and add the roasted tomatoes to the roasting dish. Add the vegetable stock to it and boil the mix. Simmer for around 20 minutes, let it cool and blend the soup well. Sprinkle some salt and pepper before serving it hot.

  • Onion Soup with Thyme and Giant Gruyère Crostini

Ingredients:

  • Beef stock: 2 cups
  • Ciabatta bread: 1 1/2-inch-thick slice (cut in half)
  • All-purpose flour: 1 teaspoon
  • Thyme: 3 to 5 sprigs
  • Swiss Gruyère cheese: 1 1/2 cups (grated)
  • Bay leaf: 1
  • Yellow onions: 1 pound (halved and cut lengthwise)
  • Fresh cracked pepper
  • White wine: 1/2 cup dry
  • Unsalted butter: 2 tablespoons
  • Sea salt: 1/4 teaspoon
  • Water: 1 cup

Directions:

  1. Melt the butter in a 5-quart pot over low heat; fry the thyme, bay leaf, onions, pepper, and salt in it until the onions are soft. Stir occasionally.
  2. Add the flour to the fried mix and cook for another 1 to 2 minutes; slowly add the wine to it and bring the mix to boil for around 2 to 3 minutes. Add the beef stock and water to the mix and simmer for around 30 minutes. Sprinkle with salt and pepper and serve.
  3. Heat the oven to broil and place the ciabatta on the middle rack in the oven and toast it for around 2 to 3 minutes until crispy. Now, take out the thyme sprigs and bay leaf from the soup and top it up with the toasted ciabatta.
  4. Layer the soup with Gruyere and put them under the broiler on the middle rack and cook the soup for another 5 minutes or until the cheese is golden and melted.
