  • Bacon Wrapped Pork Tenderloin

Ingredients:

  • Pork tenderloin: 1 (trimmed)
  • Bacon: 3 (slices)
  • Garlic powder: 1 tablespoon
  • Lawry's Seasoned Salt: 1 teaspoon
  • Crumbled leaf basil: 1 teaspoon (dried)
  • Crumbled leaf oregano: 1/2 teaspoon (dried)
  • Black pepper: 1 teaspoon
  • Olive oil

Directions:

  1. Mix the seasoned salt, garlic powder, oregano, black pepper, and basil in a small bowl and season the pork with this mix. Roll the pork with bacon and keep it joined with toothpicks.
  2. Now, dredge the bacon wrapped pork in olive oil and bake it in a 9x13 inch baking pan for about 45 to 60 minutes at 400 degrees. Once done, take it out from the oven and let it cool completely before slicing.

  • Mashed Potatoes

Ingredients:

  • Russet or baking potatoes: 2 1/2 pounds (cut into 1small pieces)
  • Butter: 1/4 cup
  • Milk or half-and-half: 1/4 cup
  • Ground black pepper: 1/4 teaspoon
  • Salt: 3/4 teaspoon

Directions:

  1. Boil the potatoes in a 4-quart saucepan over medium heat, turn the heat a bit low and simmer the potatoes for 20 minutes or until soft.
  2. Drain the potatoes and keep it aside in a large bowl; mix the remaining ingredients in the bowl and whisk the potatoes with an electric mixer until light and condensed.

  • Baked Bananas With Coconut

Ingredients:

  • Bananas: 4
  • Flaked coconut: 1/2 cup
  • Lemon juice: 1 tablespoon
  • Granulated sugar: 2 teaspoons
  • Butter: 1 to 2 tablespoons (melted)
  • Salt: 1 pinch

Directions:

  1. Heat the oven to 375 degrees. In the meantime, peel the bananas and position them in a properly greased baking dish. Season with butter and salt and spread the granulated sugar evenly over the bananas.
  2. Now, pour the lemon juice in small amount over the bananas and drizzle the coconut over it. Bake the bananas until tender for around 20 minutes. Serve with a syrup or dessert for best taste.

  • Braised Belgian Endive

Ingredients:

  • Whole heads of Belgian Endive: 4 (trimmed)
  • Lemon juice: 1 1/2 tablespoons
  • Butter: 1 tablespoon
  • Sugar: 1 teaspoon
  • Pepper: 1 pinch
  • Salt: 1/4 teaspoon
  • Water: 1 tablespoon

Directions:

  1. Cut out 1/8th to 1/4th inch of the end and slash the endive with a sharp paring knife to core the endive.
  2. Fry the endive in butter over medium heat in a saucepan, turn the sides continuously to ensure that it gets fried thoroughly. Add the remaining ingredients to the saucepan and simmer it for around 25 minutes.
  3. Serve the dish hot with a main course of beef, lamb or chicken.
