White Chocolate-Coffee Truffles



The temptation of white chocolate coffee truffles dipped in chocolate syrup can hardly be resisted by any one, and on valentine day it surely offers an air of passion and lovers are enticed to revisit and rekindle the passion of innocent love and fresh romance. Ingredients:

3/4 c Whipping cream
1 tb Instant espresso or coffee powder
14 oz White chocolate, very finely chopped
2 tb Kahlua

Dipping chocolate Ingredients:
1 lb White chocolate, very finely chopped
2 ts Vegetable oil
3 tb Chocolate-covered coffee beans, very finely chopped

Preparation:


Boil cream and espresso powder in a medium saucepan. Boil chocolate until it has completely melted and add Kalhua to it and refrigerate until its fully chilled and has settled firmly. Place the chocolate pieces on a foil-lined baking sheet with a teaspoon and refrigerate them until they are firm. Finally roll them into balls and refrigerate them again for another half an hour until they have solidified.

Preparing dipping chocolate:

Place the chocolate and oil in the top of a double boiler set over hot water and stir until its partially melted. Remove the top of the double boiler from the heat and continue stirring until the chocolate has completely melted and cooled down to the temperature of 90 degrees. Prepare 2 baking sheets by lining with aluminum foil. Dip each candy center in the melted chocolate and place them on the baking sheet. Top each with a little of the chocolate- covered coffee bean. Stir the chocolate syrup continuously. In case the centers become too soft, chill them for half an hour. Let the candies set for about 2 hours before refrigerating. If the centers are visible from the chocolate coatings then dip the bottoms again in melted and cooled chocolate.
