Twice Baked Potato

You can really make your Valentine's Day lunch or dinner truly special with twice baked potato. Potato recipes make good side dishes and another beneficial aspect of potatoes is that they can be served with any main dish irrespective of whether it is a vegetarian dish or a non-vegetarian dish. Twice baked potato is one such gorgeous potato delicacy and you can have it all the year round and not just on Valentine's Day! My Dear Valentine is helping you further by giving you an easy to make recipe of twice baked potato.

For preparing this scrumptious recipe you will need:

1 small diced yellow onion
Olive oil or any other vegetable oil
5 medium large potatoes
Milk (3/4th cup)
Butter (2tbsp)
Pepper (1 tsp)
Shredded cheddar cheese (large quantity)



To prepare, pre-heat oven to 350º and place the potatoes directly on oven rack and bake for 1hour 20minutes. Meanwhile, pour oil (very small amount) in the frying pan, heat lightly and add the onions. Sauté until tender. Remove onions from heat and drain the excess oil. Now add onions to medium mixing bowl. When potatoes are done, take out of the oven and cut the top, about 1/4 off of each potato, lengthwise. Scoop the insides out of the shell and put into the mixing bowl with the onions. Add milk, butter, and pepper to mixture. Blend the mixture well in a mixer. Add cheese and mix with spoon. Place potato mixture into a medium sized plastic bag. Twist bag so that the bag appears as a pastry bag and with scissors, clip the corner off the end of the bag. Squeeze the potato into each shell. Place on cookie sheet and bake another 20 minutes, or until cheese is melted and light brown crust forms on top of potatoes. Serve hot.
