To make this delicacy you will need: 2 kgs medium sized potatoes, peeled and cubed into one inch pieces 1 cup finely chopped onion 3 tablespoons butter 2 teaspoons grated lemon zest 2 tablespoons fresh lemon juice 1/2 teaspoon salt 1/4 teaspoon pepper Preparation: Cook potatoes in boiling water to cover for 3 minutes; drain well and set aside. Sauté chopped onion in melted butter in a large pan over medium heat until tender. Add lemon zest, lemon juice, salt, and pepper, and stir well. Add potatoes, and stir gently. Spoon the potato mixture into a lightly greased 11- x 7- x1/2-inch baking dish. Bake, uncovered, at 375° for 50 minutes or until potatoes are lightly browned, turning occasionally.
