Cinnamon Pecans

Ingredients:
2-3 eggs, egg white separated
1cup sugar
1 teaspoon salt
1 tablespoon cinnamon

Directions:
Beat one egg white and one tablespoon of cold water together into a batter and stir 1 pound of NC Pecans into the mixture. Mix 1cup of sugar, 1teaspoon salt and 1tablespoon cinnamon, in another bowl. Stir pecans into the sugar mixture until they are well coated.

Spread the mixture on a large cookie sheet and bake at 275 F for 45 minutes. Continue to stir in every 15 minutes.



Pecan Pralines
Ingredient:


1 c. buttermilk
2 c. sugar
1 tsp. baking soda
2 c. pecan halves
1 tsp. vanilla
1 tbsp. butter

Directions:

Use a large pot to prevent spillover. Mix buttermilk, sugar, and baking soda together until the sugar dissolves. Heat pot on low to medium on stove and boil until the mixture is in a soft ball stage. Stir constantly until the mixture turns light brownish. When soft ball stage is reached (it will form a soft ball when a half-teaspoon or so of the syrup is dropped into a cup of cold water), remove the pot from the stove. Add two cups of pecan halves, butter and vanilla.

Beat the mixture briskly until it becomes glossy and thick. Immediately spoon it to greased waxed paper making little patties. Let the candy cool completely before removing it from the paper.
