- TZAZIKI:
Ingredients:
- Three garlic cloves
- 1/2 sliced cucumber
- Greek yoghurt: 500 grams
- 1/2 cup of olive oil
Pour the yoghurt in a bowl and add garlic paste to it. you can also chop the garlic cloves to keep the taste intact. Now peel the cucumber and cut into thin slices. Now all you have to do is mix all the things properly. Add the olive oil and mix again. Now let the olive oil be soaked into the salad. It is now ready to serve. This can be eaten with bread or biscuits.
- Cheese Pies or Tyropita
Ingredients:
- Filo ( a kind of pastry)
- White bechamel sauce: 3 cups
- 1 tablespoon Salt
- Black pepper
- Nutmeg
- 4 tablespoons butter/margarine
- 1-pound Feta cheese, cut into fine pieces
- 6 eggs
- 1/2 cup parsley, chopped
To start with, butter the filo well and fold it in a shape of a triangle. Next, crush and make a paste out of the Feta. Add the eggs, bechamel sauce and mix it well. Now add salt, black pepper and nutmeg into it to taste. Cover the baking pan with oil from all over and place 6 filos inside it. Pour the batter made earlier into the pan and cover it with rest of the filo. Now put the mixture into the oven and bake at a medium temperature for around 30 minutes. Take out the pie once dark brown in color and cool it a little. Serve it with tomato sauce to add to the taste.
- Mousaka:
Ingredients:
- 1/2 kilo ground beef
- 1 cup of olive oil
- 1 cup tomatoes from a can
- 1 kilo / 2 pounds potatoes
- Grated cheese (Emmenthal OK)
- Salt, pepper and nutmeg
- 1/2 cup chopped parsley
- 1/2 glass white or red wine
- 1/2 chopped onion
- 2 eggs
- 1-cup flour
- 1/2 cup of butter
- 1-liter milk or 2 pints
Direction:
Half boil the potatoes. Peel them properly and keep them aside. Now fry the onions and add the minced beef to it. Make sure you have to cook until it turns brown. Now add the wine, salt, pepper, tomato, sugar and half-cup water to it. Once done, add cheese, egg, flour, and nutmeg to it. Put butter in the baking pan and add the potatoes to it. Bake until brown and serve hot.
- Meatballs Avgolemono (special recipe with egg and tinge of lemon sauce)
Ingredients:
- 1 egg
- 125grams, which is 1/4 lb rice
- 125grams, which is 1/4 lb rice
- 250grams, which is 1/2 lb butter or margarine
- 500grams, which is 1 lb of beef, ground
- 1 onion chopped
- Parsley
- Salt
- Pepper
- 2 lemons
- 2 eggs
To start with, you have to mix all the spices and ingredients together and form a ball of 2.5 centimeters. Now cook these balls for around 20 minutes. Let it cool for sometime and keep it aside. Now make a mixture of eggs and add the lone juice into it. Mix very slowly. Once the sauce is made, pour it over the meatballs that you have already made and kept aside. Sprinkle the parsley on the top and serve hot
- Frikkassee of Lamb:
Ingredients:
- Two lemons, juiced
- Olive oil
- Dill, fresh
- 4 eggs
- 6 lamb chops
- 2 onions, sliced
- 2 large Kos Lettuce/Hard lettuces
Heat oil in a pan and fry the onions until brown. Salt the lamb chops and fry it in the oil until it turns brown. Now spread the lettuce leaves on the chops and add the fresh dill to it. Cook the lamb chops on medium flame. Once, soft, let the lamb chops cool down for several minutes. Now mix the egg with lemon juice and beat it into a perfect blend. Pour the egg sauce into the pan you have cooked the meat and blend it perfectly. Serve hot with rice or bread.
- Giouvetsi also known as Lamb Stew in Clay Pots:
Ingredients:
- Salt
- Pepper
- Oregano seasoning
- 3 onions, finely sliced
- 1-liter or1 quart of tomato puree
- Tomato paste
- 1kg or 2lb of 'rice' pasta
- Olive oil
- 1 kg lamb
Take a clay pot and put some oil into it. Add the onion slices and cook it until brown. Now add salt and pepper to the lamb. Let the meat go brown and add tomato and water to it. Let it cook for around an hour and when the lamb becomes soft, remove from heat. Now add rice pasta on it and serve hot to taste better.
- Greek baklava also known as Baklavas:
Ingredients:
Let us work on the pastry first.
For the Pastry:
- Fyllo pastry: 500 gr.
- Unsalted melted butter: 180 gr.
- Cinnamon: 1 tsp
- Sugar: 60 gr.
- Chopped walnuts: 500 gr.
- 2 tbsp honey
- 2 cinnamon sticks
- Caster sugar: 230 gr.
- 300 ml water
- Lemon peel
- 2 tsp lemon juice
To start with, mix all the ingredients in a bowl. Butter the entire baking dish and cover the fyllo with butter before putting it in the pan. Now bake the fyllo with butter until it turns brown and add some water into it. Sprinkle some salt and pepper into it and let it cook for around 20 minutes. Now make the syrup by mixing the honey, sugar, and lemon peel and pour it over the cooked dish. Let it cool down and serve with lemon peel garnish.
- Chicken Soup:
Ingredients:
- 3 sliced onions
- 1 whole chicken: 1 2 pounds
- Salt
- Pepper
- Rice: 1 cup
- Olive oil: 1 cup
Boil the chicken first to start with. Once done, add the onions and olive oil to it. Boil it again for an hour. Once the chicken become soft, separate it from the froth. Now, add rice to the froth and let it boil. Once done, add the chicken to it, add salt, and pepper to taste. Once the rice is ready, serve it hot to the guests
- Okra:
Ingredients:
- Sugar: 1 tsp
- Olive oil: 1 cup
- Vinegar: 1/2 cup
- Salt
- Pepper
- 2 onions, chopped
- 1 can tomatoes
- 2 tsp parsley, chopped
- 2 pounds okra also known as ladies fingers
Clean the okra and remove the stems. Now sprinkle vinegar, salt and pepper on it. Fry the sliced onions on high flame and let it turn brown. Now add sugar, salt, pepper, parsley and tomatoes to it. Cook it the tomatoes melt in to the pan. Now add the Okra and add some water to bring it to boil. Cook for 30 minutes and serve it hot.
- Keftedes or Greek Meatballs:
Ingredients:
- Half Kilo of beef, ground
- Some mint leaves, chopped
- Salt
- Pepper
- Oregano seasoning
- 1 onion, chopped
- Flour
- 1 egg
- Olive oil
The first step is the mix the meat thoroughly with the egg, onions and mint. Now put the oregano, pepper and salt into it. Make big balls of the mixture and let the oil heat for sometime. Put the meatballs in flour and then put it in the hot oil. Let it fry for some minutes and make it go brow. Serve hot with tomato sauce or ketchup.
