  • Roasted Turkey:

Ingredients

Young turkey: 1 (14 to 16 pound) (frozen)

For the brine:

  • Vegetable stock: 1 gallon
  • Candied ginger: 1 1/2 teaspoons (chopped)
  • Black peppercorns: 1 tablespoon
  • Light brown sugar: 1/2 cup
  • Allspice berries: 1 1/2 teaspoons
  • Kosher salt: 1 cup
  • Iced water: 1 gallon

For the aromatics:

  • Red apple: 1 (sliced)
  • Rosemary: 4 sprigs
  • Onion: 1/2 (sliced)
  • Canola oil
  • Cinnamon stick: 1
  • Sage Leaves: 6
  • Water: 1 cup

Directions

  1. Thaw the Turkey a day earlier of your treat and refrigerate it or store in the cooler at 38 degrees.
  2. Mix the brown sugar, peppercorns, allspice berries, vegetable stock, candied ginger, and salt in a large stockpot over medium heat. Bring it to a boil stirring occasionally so that the ingredients mix well. Turn off the heat, cool in room temperature, and refrigerate.
  3. Next day, combine the mixture (brine) with water and ice in the 5 gallon bucket and place the thawed Turkey with the breast side down in brine. Cover it up and refrigerate it or keep it in a cool area for 8 to 16 hours. Turn the bird 1ce halfway.
  4. Heat the oven to 500 degrees and remove the bird from brine. Rinse it well with cold water and discard the brine. Roast the bird inside a half sheet pan and pat dry with paper towels.
  5. Mix the onion, apple, cinnamon stick and 1 cup of water in a microwave safe dish and set it on high for 5 minutes. Now, add the steeped aromatics to the turkey's cavity along with sage and rosemary. Insert the wings underneath the bird and coat the skin nicely with canola oil.
  6. Roast the Turkey on low level of the oven at 500 degrees for about 30 minutes. Place a thermometer into the thickest part of the breast. Reduce the oven temperature to 350 degrees and roast it for 2 to 2 ½ hours. Keep the turkey aside covered with foil paper before carving.

  • Mashed Potatoes

Ingredients:

  • Golden creamer potatoes: 4 pounds (peeled and cut into quarters)
  • Heavy cream: 2 cups
  • Bay leaf: 1
  • Chopped chives: 2 tablespoons
  • Unsalted butter: 3 tablespoons
  • Ground black pepper
  • Kosher salt

Directions:

  1. Take a large pot and season the potatoes with salt, add some bay leaves and cover it with cold water.
  2. Bring it to boil and cook for about 20 minutes over medium heat until the potatoes are tender. Drain the potatoes and remove the bay leaves from it.
  3. Heat the butter and cream in a small saucepan in the meantime. Now, put the potatoes into a bowl through a ricer or food mill.
  4. Add the hot cream to it and sprinkle with salt and pepper. Mix them together with a spoon and add the chives.
